Crispy Baked Sweet Potato Fries with Chipotle Aioli Dipping Sauce

I am going to teach you how to make fat free french fries.

WHAAAAAAT did she say?

Fat Free? Fries? That’s definitely an oxymoron.

But I’m not kidding. These babies are amazing. Super crispy, too. 

I love sweet potato fries, but often when you try to make them at home they end up limp and soggy. 

Soggy French Fries. Also an oxymoron. Kind of.

So, the trick here is to soak the fries to remove excess starch. 

Then, you use an egg white in place of oil (YEAH, I said no oil) to help crisp up the fries.

Spices are key here for added flavor. I used a combo of garlic and chili powder and it gave the fries a great subtle kick.

Line ‘em up. Put ‘em in the oven. Perfect side of fries in no time.

Did I mention they’re fat free? So ya, you can have fries with that.

Crispy Baked Sweet Potato Fries

Ingredients

1 Medium or large sweet potato

1 egg white, whisked 

Salt and Pepper, to taste

Spices, to taste (I used garlic powder and chili powder. Smoked paprika would be great, too)

Peel the sweet potato, and cut into even sized pieces. (Mine were about 1/4 inch thick.) Soak the pieces in a bowl of water for about 30 minutes. Drain the water and pat dry completely. Toss in a bowl with the egg white, salt, pepper, and spices of choice.

Preheat the oven to 425 degrees. If convection is an option, use it*. Line a baking sheet with parchment paper.  Spread the fries on the paper, making sure they are not touching. 

Bake for ten minutes. Remove the fries from the oven and flip. Return the pan to the oven and bake for an additional 10 minutes. (Baking times will vary depending on the thickness of your fries, so make sure to check them to prevent from burning).

*If you don’t have a convection oven, you may want to air out your oven every 5 minutes.  This should help the fries to crisp up more.

Chipotle Aioli Dipping Sauce

Ingredients

1/3 cup low-fat mayo

1 Tablespoon chopped chives (or 3/4 Tablespoon dried chives)

1 teaspoon chopped garlic (or 1/2 teaspoon garlic powder)

1/2 teaspoon chipotle chili powder or hot sauce

3 teaspoons lime juice

salt and pepper to taste

Combine all ingredients in a small bowl. Place in the fridge to chill. Remove when ready to use.
